Strozzapreti di Farro con Pancetta e Cicoria
Today people start to make noodles from everything (my friend Boris also from raw zucchinis :-). I normally don't like this. Pasta has to be from wheat and normally from "Granum durum", I neither appreciate very much the wholemeal variations....
But: I found in the cupboard a package of "strozzapreti di farro". I had just cooked a rather small amound of "ciccoria" and did not really know what to do with it. Furthermore more I found a rest of "pancetta". So I fried the pancetta with garlic and peperoncino in a pan and added the ciccoria. I boiled the pasta and nearly overcooked it. This kind of strange pasta is ready nearly by touching boiling water.
Mix the pancetta/ciccoria with the pasta and: add some pecorino primo sale (by no means ripe or salty cheese).
Not too bad!
